Oh, it's a beautiful thing - eveything you've got in the fridge, just like Irish stew in "3 men in a boat":-)
I use frozen pie crust that I buy in Trader Joes, pre-bake it, cover with shredded cheese and fill with egg-milk mix (2 eggs beaten with 1/2 cup heave cream or Half and Half) plus the filling of your choice - mushrooms, ham, cheese, caramelized onions, etc...
